Vegetarian Toastie For Lunch

My lunch.
A sandwich.
Full of colourful flavours.
Toast the bread and you'll get some crunch.

avocado pepper tomato toastie 0276

In my sarnie:
Toasted home-made bread
Slices of fresh tomato
Slices of fresh, ripe avocado
Marinated sundried peppers in olive oil - straight from the jar (From a jar? So what, they're good!)

For someone who doesn't really like sandwiches that looks so tempting! Reminds me as well have run out of peppers, will have to stock up! x

Stunning pic and gorgeous sounding sandwich. My idea of heaven. Don't think there is anything wrong with peppers from a jar, there are too much of a hassel to do yourself just for a sandwich.

VERY interesting sandwich. I took a peek at your photo contest site and found that very interesting too. Good luck with that. You're good.

fantastic sandwich! i'm loving the colours and that drippy oil. i'm thinking some fresh rosemary-infused bread dipped in that oil, even if it's from the jar. :)

What I love about that is the unashamed messiness of it all ;-) I can just imagine eating it, and getting most of it down my chin, etc, etc...

I had something similar for breakfast, served panini style. Great minds think alike.
